Best of all, despite all the fancy photography and staging, despite all the farm-to-table doings, this book (and as far as I can tell, Kosmas-Flores herself) are totally unpretentious. Exotic ingredients are kept to a minimum -- I think lilacs are the only thing I wouldn't be able to procure down here in Houston, but that was only a couple recipes anyway. The recipes themselves err on the side of the simple and straightforward, and most are only one page long. If it seems to go beyond that, you're either making more than one thing (e.g. turkey and dressing), or it's a series of variations of which you're only making one option. ( )
