I'm searching for the title of a book that takes place in a post-apocalyptic world, and it has heavy religious themes throughout. I think, but I'm not positive, that there was something wrong with the world... like there was only one man left, or one woman?

The book is done in two perspectives. The first perspective is from a man going on a journey to find this woman he had a dream about. The second perspective is from the woman's cat, in which a cat is the guardian of the pregnant woman who carries the new baby Jesus (symbolically?). But when the baby is born, it is a girl.

One part of the story that stands out is how the cat describes how it has lived since ancient times and has seen/been the guardian of many significant births.

Another part I vaguely remember is during the man's journey, he comes across a town filled with children. It goes on at length about how there are no adults around in that town and the children have their own kind-of government system?

I'm sorry about how vague this all is, I read this book back in the mid-90's so it's pretty hazy, but I remember how it left an impression, and have the desire to read it again.

This sounds a little bit like Plainsong by Deborah Grabien. It is a post-apocalyptic story featuring a pregnant woman, and telepathic animals. It had strong religious (but ultimately anti-organised Christianity) themes. I don't remember it all very clearly, as it is a long time since I read it, but it might be worth looking at on amazon as there are some quite detailed customer reviews.
