This getting a bit dated now, but nevertheless is a good introduction to cabling. No doubt there are later revisions.
I bought this book as I was undertaking the specification and design of network facilities for a new building. It was invaluable for that task. It includes everything you need to know to manage infrastructure cabling including fiber optic and copper cabling.
