Henry Chung was born Chung WuShiung in the Hunan Province, China on September 9, 1918. He graduated from the National Central University in Chongqing. He worked as a civil servant and diplomat. After World War II, China's Nationalist government sent him to Japan and then to Houston, to work in a mostra altro consulate office. He stayed in the United States after the Nationalist government was defeated in the Communist revolution. He opened several businesses including a dry cleaner, a shoe repair store, a custard shop, and a hamburger joint. In 1974, he opened Hunan, a tiny restaurant in San Francisco's Chinatown, where he introduced diners to hot, peppery Hunanese food. He later opened several more restaurants around San Francisco that were known as Henry's Hunan. His book, Henry Chung's Hunan Style Chinese Cookbook, was published in 1978.
