Here's an unusual sandwich recipe that is one of my summertime favorites. It's adapted from a recipe I found on the internet years ago. Hope y'all enjoy it!
African Stuffed Pita Sandwiches
Serves 2
Several leaves lettuce
Several leaves spinach
1 small tomato
1 stalk celery
½ small cucumber or 1 small pickling cucumber
1 small carrot
½ avocado
2 cups alfalfa sprouts
1-2 T. mayonnaise
½ t. mustard
Squeeze of fresh lemon juice
Sea salt or seasoned salt, to taste
2 whole pitas
1. Chop first 5 ingredients in large salad bowl.
2. Grate carrot and add to mixture. Add alfalfa and toss.
3. Cube avocado, toss into salad.
4. In separate bowl, stir together mayonnaise, mustard, lemon juice, and salt. Mix well. Add to salad; stir in.
6. Stuff into slightly warmed pitas. Enjoy now, or wrap in plastic and refrigerate.

Glad it sounds good to you! It takes more preparation that most other sandwiches (especially if you make the pitas yourself like I do), but I think it's worth it. :-)
