Are there any shounen series that might have some appeal to a seinen audience that I have missed out on?
I'm looking for stuff like Fullmetal Alchemist, Neon Genesis Evangelion, Death Note, etc. An interesting storyline, SF is a plus, fantasy is a minus ;) I am also not looking for 'harem'-type stories like Love Hina... that's another kind of appeal altogether ;) (much of which is probably lost on me, given that I'm a heterosexual female! LOL)
Manhwa is also OK if it fits the above guidelines - like XS, though I finished reading that some time ago.

Trigun, Trinity Blood and, even though they have fantasy elements, I'd still reccomend Saiyuki and Bleach.

I'd second the Trigun recommendation, though that one gets a little weird as its second series, Trigun Maximum, goes on. Hellsing goes hand in hand with that. Tenjho Tenge might also be good. The female character designs may make you think it's harem-y, but its not.
I would also try Jojo's Bizarre Adventure, which is one of the coolest series I've ever read and definitely a more mature, weird shounen series. Though it spent most of its run in Shounen Jump, its newest incarnation runs alongside Tenjho Tenge in Ultra Jump.

Yay, thanks for the recs! I am very UNpleased to see that Jojo's Bizarre Adventure is not being released in German... I'll try to take a look at the rest the next time I go shopping for manga.
I've seen the Trigun anime a few years back (and liked it), how does the manga compare?
I read a volume of the Hellsing manga (in Norwegian, oddly enough), and it was quite nice.
