This one turned out just as fabulous as I always knew it would be. I love everything Ali puts out. Her daily recipes, her guides, her print outs, her kindle books, her new spiralizer, and now this: a great kitchen cookbook reference of her amazing recipes! ( )

I had just bought a spiralizer after watching the Inspiralized Youtube videos and trying some online recipes from the author's website Inspiralized. But I realized I wanted this cookbook by Ali Maffucci, too, so I could thumb through the pages and write down modifications and other notes. So after the book arrived (yes, ordered in on Amazon) I spent a couple of days reading it and trying some of the many delicious recipes. In addition to the easy and creative recipes (desserts! as well as entrees, salads, soups and appetizers), the author's enthusiasm and conversational tone makes this book seem like you're in the kitchen with a friend who's walking you through each step and answering your questions. And another great feature is the the nutritional info for each recipe - how many calories, fat, carbs, protein, etc. ( )

Turn Vegetables into Healthy, Creative, Satisfying Meals

There is almost no expert on the planet that says we need to eat less vegetables. In fact, most experts and lay people alike agree that we all need to be eating more vegetables. But it sure can be difficult to get in enough servings per day! Now, with this book and the handy gadget that it revolves around, it can be easy!

I enjoyed the author’s story as to how she got started with “inspiralizing” (turning almost any hard raw vegetable into long thin noodles).

Ms. Maffucci includes lots of helpful tips like, how to choose which blade to use, how to store uncooked noodles, yields and cook times, recommended pantry items, and most important of all, how to avoid watery sauce.

Some other things I appreciated about this book was that it didn’t only have recipes for just a few vegetables, like carrots, zucchini and cucumbers. No, it included recipes for twenty two vegetables, including some not so common ones, which is a good way to get a wider variety of vegetables into your diet!

Not only that, it has a wide variety of the type of recipes. They were not all for side dishes or main dishes. There were breakfast recipes, snack recipes, soup recipes, salad recipes, sandwich recipes, dessert recipes and more!

The recipes themselves each had full color photos, nutritional information, codes for common dietary restrictions (vegan, vegetarian, gluten-free, paleo) and easy to understand instructions.

If you’ve been looking for ways to get more vegetables into your diet this book (and along with the required gadget–>>Paderno World Cuisine Spiralizer) then this book is for you!!
