Found: Volcano (Mt Rainier?) erupts, causes apocalypse?

I encountered this book in 2005. My fifth grade teacher was going to read it to the class and showed us the cover. I guessed exactly what it was about, he asked if I read it before, but I don't think he believed me when I said I didn't, and he ended up not reading it to us (whoops!)

I am pretty sure it was Mt Rainier because I am from WA and I am pretty sure Teach made a big deal about it being our state...but I could be wrong.

The cover: it was gray, had the mountain in the background, and showed a road with a man on one of those trikes you lay down on (on your back) to pedal. He was wearing a face mask and glasses and heading away from the mountain, towards the viewer.

I guessed that the book was about the mountain erupting and people needing to leave the area, which was apparently on the nose. I also recall mentioning of the ash and destruction making the area uninhabitable, so I believe that the book was heading towards "apocalypse by volcano"

This is unfortunately all I have to go on, and it's been a fruitless search! So I'm hoping someone can help

Ashfall was published in 2011.

Memory Boy by Will Weaver? It seems to involve a series of eruptions, including Mt Rainier, and one of the covers on LT shows recumbent bikes. Published in 2001 so the date would fit.
