Maria Josefa Lluria De O'Higgins left Cuba in her teens to attend boarding school in Philadelphia. As an adult, she has lived all over the world, but returned to Cuba each summer until the communist revolution. She lives with her family in Miami.

O'Higgens - Hardly a Cuban name, But Maria Josepha LLiria de O'Higgens grew up in Old Cuba, in a pre-communist world of abundance and possibilities. Then there is that link to everyone's heart - the food. Having recently moved to Miami, what I find in the rich vibrant cafe's of Hialeah and "Callo Ocho" (Eighth street is Miami's little Cuba)is a newer cuisine. What Maria gives us is a healthy (no fried empanadas) mixture of fish, seafood, pork, eggs and veggies. Dishes such as Baked Pargo (whole red snapper with potatoes, garlic, onions and green peppers), Oxtail (lots of wine in a long-cooking stew with fall-of-the-bone tender meat), bacalao (salt cod - yes salt cod, prepared in many wonderful ways) among others. A must for those wishing to experience "real Cuban' food. Of course there's still nothing that tops a good Cuban Empanada or Pastellito, with nice Cortadito (sweet Cuban Coffee) standing at the counter at my favorite Cuban eatery in Hialeah. AAhhhh!
