An introductory book about sous vide modernist cooking.It is not tied to Instant Pot branded devices. It does not recommend the Instant Pot Immersion circulators heaters, or discuss choosing or using immersion heaters, or other sous vide devices. It does not refer to the temperature control on Instant Pots in model lines (Ultra and Max), which allow for sustained cooking at the temperatures used in sous vide cooking.
