Hooks, Lies & Alibis: Louisiana's Authoritative… di John D. Folse
The seafood focused cookbook from one of my favorite chef authors. So many recipes and lots of good history.
Simply put, an amazing book. It's gorgeous, filled with oodles of interesting history, and most importantly delicious recipes! I can't personally vouch for the authenticity but it was recommended highly by my Cajun uncle.
Excellent! It is the definitive cookbook for Cajun and Creole cuisine from basics to culinary treats. The history of the food culture and glossary of Louisiana products are wonderful to read and reference. The recipes have perfect harmony of all ingredients and it does not fall into the trap of over-spicing commonly found in Louisiana cookbooks. John Folse is a genius in the kitchen and it comes through beautifully on the page.
I have no idea about the accuracy of statements in the book, but it is surely well-written, and his statements distinguising Cajun from Creole food seem quite logical . The section on sauces is worth the price of the book!
It has many recipes not found other places such as Cochon de Lait. However, I did not find (nor have I any any Louisiana cookbook - did find on the Internet) a recipe for pistolettes.
Be warned, there is no recipe for Poor Boys there, or at leat I didn't find it. There's lots of other stuff though - don't think you'll miss them. The drawings are great too!… (altro)
