If you've ever fallen in love with the food of a particular restaurant and bought the chef's cookbook, expecting - then failing - to achieve the same result, then you'll know exactly what I mean when I say that Les - a successful restauranteur - doesn't disappoint. He doesn't "omit" steps, assuming you know them, nor does he "forget" key ingredients. If you follow his recipes exactly, you'll get something that actually looks and tastes the way that you expect it to. I don't really know him - although we have met - but from experiences with my family and business associates on literally hundreds of occasions, I surely knew his TASTE OF NEW ORLEANS in Atlanta, and this book enables the user to recreate something of this cozy and much-missed restaurant. I'm not sure if it's still in print, but - if it is and you like lighter versions of creole cooking - you ought to check out this cookbook.… (altro)
